La masse volumique dite "masse à l'hectolitre", également et traditionnellement appelée "poids spécifique", est un critère universellement utilisé dans le commerce des céréales et principalement du blé. Sa détermination, simple et facile à mettre en oeuvre, donne quelques indications sur la teneur en eau et les impuretés des céréales et le rendement en farine dans le cas des blés.
